A green tea that is produced by steaming the leaves to destroy the enzymes that might otherwise ferment the leaves. The leaves are then rolled either by hand or by mechanical rollers to bring out the juice in the leaves that are responsible for its flavour. The rolled leaves are then fired to dry them. The process of producing green tea is very specific because variation in the drying time can result in fermentation of the leaves which spoils the flavour.

    Brewing advice

    Brewing Advice:

    1. Use 1 teaspoon per cup

    2. Heat water to roughly 95°C/203°F

    3. Pour water into the cup, on top of the tea leaves

    4. Add a dash of cold water or milk (if recommended)

    5. Steep for 2-4 minutes

    6. Enjoy
