Hōjicha is a traditional Japanese green tea known for its warm amber-brown colour, soothing aroma, and smooth, toasty flavour. It is made by carefully selecting tencha leaves & stems and slowly roasting them in porcelain pots, creating a naturally mellow tea with low bitterness and a gentle sweetness.

How to brew Ceremonial Matcha

A refined ritual — made simple. Choose your preferred preparation below.

Traditional Preparation

Brewing Advice:

  1. Sift 1 tsp of matcha into a cup. This will prevent you from having any lumps.
  2. Add 2oz of hot water. For best results use water just under boiling temperature.
  3. Whisk vigorously in a zig zag motion -forming an "M" or a "W" shape- until a fine froth appears on the surface.
  4. Sip and savour — smooth, vibrant and full of umami!

Hot Latte Matcha

Prefer it with milk?

  1. Prepare your matcha using slightly less water than the traditional method.
  2. Sweeten if desired using honey, vanilla syrup or your preferred alternative.
  3. Top with warm, frothed milk —dairy or planted based— and stir gently.

Iced Latte Matcha

Enjoy it iced?

  1. Whisk your matcha with a small amount of warm water until smooth.
  2. Pour over a glass of ice.
  3. Top with cold water for a classic eiced matcha — or add chilled milk for a refreshing iced matcha latter.
  4. Stir well and enjoy!
